VITO does not filter it in particular, but due to the turbulence in the oil, the water gets to the surface where it can evaporate.

Does VITO also filter out flavours?
VITO filters suspended sediments and bitter substances from your oil, and therefore the flavours that have a negative impact on the taste of fried dishes.
What happens to bacteria inside the VITO?
From a hygienic point of view this is completely harmless as VITO is used in oil at operation temperature of 175°C.
How do we clean VITO?
We recommend to clean VITO on the same day you change the particle filter. Either way put the unit - except from the motor part unit - in a dishwasher or clean it in the sink with a wet tissue and let it dry afterwards and then insert a new particle filter.
What if there is a burnt french frie in the oil?
VITO will first cut it and filters it afterwards. Big food pieces may also come to the surface of the oil and can be easily skimmed.
